Description:Tasting Notes: Passion fruit, peach pit, citrus, guava, grains of paradise. Notes on the Vineyard: Our Malvasia comes from a single block Malvasia de Sites located in our family estate of el Sot (Muntanyes d'Ordal). The vineyard lays on very calcareous soil, with a limestone-clay texture. All of our fruit is certified organic by CCPAE. Notes on Winemaking: The fruit was hand harvested and selected in the vineyard, then whole-bunch pressed at very low pressure (with no maceration), followed by light racking. It fermented in a stainless steel tank and French oak barrels, at controlled temperature of 18°C. Following fermentation, the wine went through 8 months of sur-lie aging, with intermittent bâtonnage
