Description:In order to produce a fresh and aromatic style, fermentation takes place very slowly in stainless steel vats at low and controlled temperatures (between 16 and 18°C). This procedure includes a brief maceration to extract color and aromas and the pressing of the grapes without skins. The addition of grape brandy stops the fermentation, resulting in fortified wine. Rich and well-balanced wine is produced by mixing wines from various harvests that have undergone varying degrees of maturity in big oak barrels and stainless steel vats for a minimum of three years.
